Shrimply the Best Avocado Grain Bowl
This bowl has the perfect combo of protein, healthy fat, and carbs! It's also very filling; as a lunch or dinner option, you will stay full for hours! What makes it delicious is the seasoning! Be sure not to cook the shrimp for too long, a few minutes on each side is enough to cook it all the way through but still be juicy! Your shrimp will be done when the flesh changes from grey/translucent to white with hints of pink. Enjoy!

SERVES: 4 | PREP TIME: 35 minutes
INGREDIENTS
1 lb shrimp, deveined & peeled
2 tbsp oil
1/2 cup dry quinoa
1/2 red cabbage, chopped
3 cups mixed greens
1 avocado
2 corn on the cob
1 bell pepper
1 lime
1/2 tsp garlic powder
2 tsp cumin
1 tbsp sesame seeds
1 tsp paprika
INSTRUCTIONS
Wash and cook your quinoa in a pot according to the package.
Season your deveined and peeled shrimp with paprika, garlic powder, and cumin. Pour 1 tbsp of oil in your pan and heat to medium. Cook your shrimp until it is fully cooked and has a little char on it. Set aside.
Remove the kernels from the corn and put into a large bowl. Chop up your bell pepper and add it to the bowl. Squeeze the lime into the bowl and mix thoroughly.
Heat 1 tbsp of oil in your pan and add the red cabbage. Add sesame seeds and cook until cabbage is soft.
Assemble all ingredients into a mealprep container. Garnish with avocado. Season with salt and pepper to taste (optional).
