Tofu Broccoli Stir Fry
Stir frys are my absolute favorite go-to weekday meals, because they're so quick and easy. If you are a mealprepper or short on time and want to cook a hot meal daily, you can prep your ingredients in advance and have them ready to go! I love including tofu with my meals because it's a great source of protein! You can also make this dish vegan; just omit the oyster sauce!

SERVES: 4 | PREP TIME: 30 minutes
INGREDIENTS
3 tbsp oil of your choice
14 oz firm tofu, pressed and cut
into rectangles
1.5 lbs broccoli, chopped into florets
2 cloves garlic
3 tbsp tamari
4 tbsp oyster sauce
1/2 cup water
2 tbsp hoisin sauce
1 tbsp sesame seeds
2 tsp pepper
INSTRUCTIONS
Press out the water in the tofu for approx. 30 minutes - 1 hour by wrapping it in paper towels and placing a heavy object on top of the tofu. Pressing out the water will allow the tofu to get crispy.
Put 1 tbsp of oil into a large nonstick pan and heat on medium until oil is warm. Add 2 tbsp tamari. Place tofu in an even layer on pan and drizzle additional 1 tbsp over tofu. When one side begins to get crispy (after approx 3-4 minutes), flip tofu to the other side.
Cook for an additional 3 minutes. Set aside.
Pour 2 tbsp of oil into your pan, and heat on medium-high heat. Add garlic and broccoli, salt and pepper, and begin to stir fry, combining the ingredients. Cook for approx. 5 minutes. Turn the heat down to low and add the tofu back in. Add your hoisin and oyster sauce and mix thoroughly. Cook for another 1-2 minutes.
Top with sesame seeds to garnish. Serve over rice or quinoa.
